Galacare™Galacto-oligosaccharides (GOS) are functional prebiotic oligosaccharides built on a galactose backbone, in which 1–7 galactose units are linked to a terminal galactose or glucose molecule. The mixture contains more than 15 structurally distinct oligomers, giving Galacare™GOS a far more diverse chain-length profile than most other prebiotic fibers. It exists as a colorless to pale-yellow water-soluble powder, dissolves easily in water, and serves as an important functional sweetener in healthcare industry. Thanks to its β-glycosidic linkages, Galacare™GOS remains stable under strongly acidic conditions (pH 3) and at temperatures up to 180°C, which makes it exceptionally compatible with heat-sterilized beverages, fermented dairy, infant formula, baked goods, and dietary supplements.
