What are Fructooligosaccharides?

Fructooligosaccharides (FOS) are natural oligosaccharides composed of 2-10 fructose molecules linked by β(2-1) glycosidic bonds, terminated by a glucose molecule or consisting solely of fructose molecules. FOS are primarily obtained through enzymatic hydrolysis of inulin or transglycosylation polymerization of fructose, and are widely found in natural foods such as onions, garlic, bananas, and honey.

In food industry applications, fructooligosaccharides appear as white to pale yellow powder or syrup with pure sweetness (30-60% the sweetness of sucrose) and excellent solubility. Due to their unique prebiotic properties, fructooligosaccharides are widely used in healthy foods, functional snacks, and nutritionally fortified products.
