What are Galacto-oligosaccharides?

Galacto-oligosaccharides (GOS) are a type of functional prebiotic with galactose as the basic unit. Their molecular structure consists of galactose or glucose molecules connected with 1-7 galactosyl groups, a complex mixture with over 15 active monomers. Among the internationally recognized three major prebiotics, galacto-oligosaccharides are the only oligosaccharides present in breast milk that can be simultaneously utilized by 8 major beneficial bacteria in the human intestine, earning them the title of "Gold Prebiotic."

GOS is a low molecular weight water-soluble dietary fiber with low viscosity, strong moisture retention, does not bind to minerals, has a refreshing taste, lower caloric value, and a sweetness of only 20%-40% of sucrose. It exhibits strong stability to acid and heat, not decomposing even at 180°C or pH 3 conditions, with high coloring properties, strong water retention capacity, no adverse texture or flavor, and is not digested by human digestive enzymes, possessing excellent bifidobacterial proliferation activity.
