What is Erythritol?
Comprehensive Analysis of Erythritol
Erythritol is a four-carbon sugar alcohol with the molecular formula C₄H₁₀O₄. It exists widely in nature, found in fungal mushrooms and lichens, melon-type fruits including melons, grapes, and pears, and can be detected in small amounts in animal eye lens crystals, plasma, fetal fluids, semen, and urine. It also exists in small quantities in fermented foods such as wine, beer, soy sauce, and Japanese sake.
Erythritol is typically produced through glucose fermentation, appearing as a white crystalline powder with a refreshing sweet taste. It is not easily absorbed, stable at high temperatures, stable across a wide pH range, and has a mild cooling sensation when dissolved in the mouth, making it suitable for various food applications.
It has low sweetness (60-70% of sucrose), high thermal stability up to 200°C, moderate solubility of 37% at 25°C, low hygroscopicity even in 90% humidity, and extremely low calorie content of only 0.2-0.4 kcal/g.
