Applications of Resistant Dextrin in Baking Industry
What is Resistant Dextrin?
Comprehensive Analysis of Resistant Dextrin
Resistant Dextrin is a low-molecular-weight water-soluble dietary fiber refined through processes including partial hydrolysis, polymerization, and separation using non-GMO natural corn starch as raw material. It is a low-calorie glucan obtained by industrial extraction and refining of the indigestible components of roasted dextrin.
The dietary fiber content of resistant dextrin can reach up to 82% or higher, belonging to the category of soluble dietary fibers. Its appearance is white to pale yellow powder, slightly sweet and odorless, with excellent water solubility. A 10% aqueous solution appears transparent or pale yellow with a pH value of 4.0-6.0.
It has excellent processing stability, good solubility with low viscosity, slightly sweet and odorless without affecting flavor, low calorie property of approximately 0.5-1.5 kcal/g, high tolerance with threshold of 45 grams per day, and prebiotic effects promoting probiotic proliferation in colon.
Health Benefits
Blood Sugar Regulation
Resistant dextrin mainly delays starch degradation and glucose absorption by adsorbing glucose and inhibiting amylase activity, suppressing post-meal blood sugar elevation, making it very suitable for diabetics.
Prebiotic Effects
In China, resistant dextrin was confirmed as a prebiotic product at the end of 2008 by the "Public Nutrition Improvement Micro-ecological Project." The goal is to increase the use of prebiotic products in China to improve gut microbiota imbalance.
Reducing Intestinal Burden and Preventing Intestinal Diseases
Resistant dextrin ferments in the colon to produce short-chain fatty acids, inhibiting the growth of spoilage bacteria. As a substrate, it promotes the proliferation of probiotics, repairs intestinal epithelial barrier function, inhibits tumor cell proliferation, inhibits carcinogenic chemical activity, and provides antioxidant effects.
Prevention of Cardiovascular Diseases
The healthy effects of resistant dextrin on serum have been confirmed in animal experiments with rats, chickens, dogs, pigs, and human trials. Results show that continuous intake of resistant dextrin can reduce serum cholesterol and neutral fat concentrations and body fat mass.
Assisting Weight Management
Resistant dextrin increases satiety by absorbing water and swelling in the digestive tract, helping to reduce subsequent food intake. It also indirectly reduces fat synthesis and accumulation by improving glucose and lipid metabolism.
Promoting Mineral Absorption
Resistant dextrin can improve nutrient utilization and promote the absorption of trace elements such as calcium, iron, and zinc, making it particularly suitable for application in infant foods.
Application Advantages
Increasing Dietary Fiber Content
Adding resistant dextrin to baked goods such as bread and cookies not only increases the fiber content of the food but also improves the texture and taste, making bread softer, delaying staling speed, and extending shelf life.
Improving Texture and Taste
Resistant dextrin can keep products soft and moist, increase preservation time, and extend shelf storage periods. Adding it to cookies can improve the crispness and taste of cookies, making them maintain their crispness while adding a certain toughness.
Delaying Starch Retrogradation
Resistant dextrin can delay the occurrence of starch retrogradation, making product texture softer and taste more delicate. It can also produce attractive coloring through the Maillard reaction.
Partially Substituting Flour or Sugar
Resistant dextrin can partially substitute flour or sugar, reducing calories while maintaining product taste and flavor, making cakes fluffier, increasing moisture retention, and preventing cakes from drying and cracking.
Improving Product Stability
Resistant dextrin can strengthen dough gluten strength, enhancing taste and quality. In pastries, it can keep products soft and moist, increase preservation time, and extend shelf storage periods.
