Frulyte™Fructooligosaccharides (FOS), also known as oligofructose, are functional oligosaccharides in which fructose units are linked by beta-glycosidic bonds: molecules either carry a terminal alpha-D-glucose unit with a degree of polymerization of 3-9, or consist of fructose units only with a degree of polymerization of 2-9. Frulyte™FOS occur naturally in a range of plants, including chicory, garlic, onions, artichokes and bananas. Commercial Frulyte™FOS are produced mainly through enzymatic conversion of sucrose or extraction from chicory roots.
FOS appear as a white crystalline powder with a clean, pleasant sweetness of about 30-50 percent that of sucrose. As a naturally occurring prebiotic carbohydrate, human digestive enzymes cannot hydrolyse its beta-linkages, so Frulyte™FOS pass intact through the stomach and small intestine to reach the large intestine, where they are selectively utilized by beneficial bacteria such as bifidobacteria.
