What is Eryfine™Erythritol?
Natural Sweetness, Enhanced Performance
Eryfine™Erythritol is a four-carbon sugar alcohol with the molecular formula C4H10O4. It is a white crystalline powder with a clean, sweet taste and a slight cooling sensation on the palate. Eryfine™Erythritol occurs widely in nature: it is found in melons, grapes and pears, as well as in mushrooms and lichens; small amounts can be detected in the eye lens, blood plasma, fetal fluids and urine of animals; and trace levels naturally occur in fermented foods such as wine, beer, soy sauce and Japanese sake.
Commercially, Eryfine™Erythritol is produced through microbial fermentation of glucose. Its sweetness is about 60%-70% that of sucrose, with a pure sweet taste and no bitter aftertaste. It carries an extremely low caloric value of only 0.2-0.4 kcal/g, remains heat stable up to 200 degrees Celsius, and works across a wide pH range. Its solubility is approximately 37% at 25 degrees Celsius, and it shows very low hygroscopicity even at 90% relative humidity. Because of its small molecular size, about 90% of ingested Eryfine™Erythritol is absorbed in the small intestine and excreted unchanged in the urine, with very little entering the large intestine for fermentation. This makes Eryfine™Erythritol the best-tolerated sugar alcohol (digestive tolerance levels are approximately 0.8 g/kg/day for women and 0.66 g/kg/day for men).
Health Benefits
Near-Zero Calories and Blood-Glucose Friendly
Erythritol is barely metabolised by the human body, with about 90% excreted unchanged in urine. It supplies only 0.2-0.4 kcal/g, does not participate in glucose metabolism, and has virtually no impact on blood glucose or insulin levels, making it an ideal sweetener for sugar-controlled and low-carb meal design.
Oral Health Protection
Erythritol cannot be fermented into acid by cariogenic bacteria in the mouth, so it does not erode tooth enamel or cause dental caries. Regulators in many countries allow "sugar-free" and "tooth-friendly" claims on Eryfine™Erythritol-containing foods.
Better Digestive Tolerance Than Other Sugar Alcohols
Compared with xylitol, sorbitol and maltitol, Eryfine™Erythritol is mainly absorbed in the small intestine and directly excreted, so only a very small fraction reaches the large intestine for microbial fermentation. Within recommended intake levels it is far less likely to cause bloating or diarrhoea, which allows larger serving-level use in meal products.

Erythritol is naturally present in fruits and fermented foods, and human blood plasma itself contains trace amounts. The industrially fermented product has undergone systematic toxicological evaluation and is approved for food use across China, the US, the EU and Japan.
