What is Allinkle™Allulose?
Natural Sweetness, Enhanced Performance
Allinkle™Allulose (also known as psicose) is a naturally occurring rare monosaccharide found in small quantities in foods such as figs, raisins, wheat, maple syrup and brown sugar. It is classified as a "rare sugar" because it accounts for less than 0.005% of naturally occurring carbohydrates. Structurally, Allinkle™Allulose is an epimer of fructose - it shares the same molecular formula (C6H12O6) but differs in its three-dimensional structure. It appears as a white crystalline powder with a sweetness of about 70% that of sucrose, delivering a clean, sugar-like sweetness without any unpleasant aftertaste.
Once absorbed, Allinkle™Allulose is barely metabolised by the human body: it provides only about 0.4 kcal/g (roughly one tenth of sucrose) and has a minimal impact on blood glucose and insulin levels. Allinkle™Allulose is currently approved for food use in major markets including the United States (GRAS status), Japan and South Korea.
Health Benefits
Near-Zero Calories with Minimal Glycaemic Impact
After absorption, Allinkle™Allulose is largely excreted unchanged and provides no usable energy, offering only about 0.4 kcal/g. Its glycaemic index and insulin response are extremely low, making it an ideal sweetener for low-sugar and carbohydrate-controlled meals.
Helps Suppress Postprandial Blood Glucose Elevation
Studies show that Allinkle™Allulose inhibits intestinal disaccharidases such as sucrase and maltase. When consumed together with meals containing sucrose or starch, it slows sugar absorption and flattens the post-meal blood glucose spike - a benefit recognised under the functional food systems of Japan and South Korea.
Helps Reduce Fat Accumulation
Regular intake of Allinkle™Allulose has been associated with reduced lipogenesis and reduced abdominal fat accumulation, supporting weight management alongside a reduced-calorie diet.
Tooth-Friendly
Allinkle™Allulose is not fermented by cariogenic oral bacteria to produce acid and therefore does not contribute to tooth decay, supporting sugar-free and tooth-friendly formulations.
Application Advantages
Less Sugar, Same Sweetness, Closest Taste to Sucrose
At about 70% of sucrose sweetness with a clean sweetness curve and none of the bitter aftertaste or cooling off-notes of high-intensity sweeteners, Allinkle™Allulose also resembles sucrose in crystalline form and solubility. It can replace a large proportion of sucrose in meal formulations without requiring large amounts of bulking agents to correct the mouthfeel, ensuring high consumer acceptance.
Bakes and Cooks Beautifully with Colour and Aroma
As a reducing sugar, Allinkle™Allulose participates in the Maillard reaction and caramelisation. In baked bagels, pan-seared meat and rice dishes and braised sauces that require high-temperature processing, it develops an appealing golden-brown colour and roasted aroma - an advantage most sugar alcohols such as erythritol do not offer, so low-sugar products still look, smell and taste the part.
A Functional Selling Point for Post-Meal Blood Glucose Management
Allinkle™Allulose not only barely raises blood glucose itself but also inhibits the absorption of sucrose and starch eaten in the same meal. It is therefore ideal for diabetic meals, blood-glucose-management meals and low-sugar entrees, and has become a signature ingredient in "toushitsu OFF" (carbohydrate-controlled) meals in Japan and South Korea.
Excellent Blending and Processing Tolerance
Allinkle™Allulose blends synergistically with sweeteners such as steviol glycosides and erythritol to round out the overall sweetness profile. It withstands high temperatures and acidic conditions and is stable through freeze-thaw cycles, suiting frozen entrees, chilled bento meals and ambient soft-pouch meals alike.
