Erythritol is a four-carbon sugar alcohol sweetener produced through natural fermentation, using non-GMO glucose as the raw material and specific microbial strains. Its sweetness intensity is approximately 60%-70% that of sucrose, offering a pure, mild sweet taste without any bitter or metallic aftertaste. Regarding metabolic properties, due to its small molecular weight (approx. 122.12 g/mol), erythritol is primarily rapidly absorbed through the small intestine. Over 90% is excreted unchanged in the urine without metabolism, and the remainder reaching the large intestine is not fermented by gut microbiota. Consequently, it contributes almost no calories (<0.2 kcal/g), has a glycemic index (GI) of zero, and does not cause gastrointestinal discomfort, making it particularly suitable for long-term use by diabetics, weight managers, and health-conscious consumers.

In terms of physicochemical properties, erythritol exhibits excellent thermal and chemical stability.
