What Is EnernovaSolid Corn Syrup?

EnernovaSolid Corn Syrup is the spray- or drum-dried powder form of glucose syrup derived from corn starch. The production process starts with corn starch, which is hydrolyzed by enzymes, acid, or a combined acid-enzyme process to break the starch chains into glucose, oligosaccharides and dextrins of different molecular weights. The hydrolysate is then concentrated, decolorized, ion-exchanged, and dried into a free-flowing powder.

The finished product is a white to pale-yellow powder or granule, has a clean sweet taste at roughly 20%–30% of the sweetness of sucrose, dissolves readily in cold water to form a clear solution, and blends easily with other dry or liquid ingredients on the production line.
