1. Core definition
Resistant dextrin is essentially a mixture of oligosaccharides and polysaccharides, and its molecular structure contains a large number of glycosidic bonds (such as α-1,6 glycosidic bonds) that are difficult to be broken down by digestive enzymes in the human small intestine, so it can enter the large intestine like dietary fiber and be fermented and utilized by the intestinal flora, belonging to the important category of "soluble dietary fiber".

3. Mainstream production process
The typical process of using corn starch as raw material is as follows:

Baking and polymerization: The hydrolyzed starch slurry is baked at 120-160°C to caramelize and polymerize the starch molecules to form dextrin with a resistant structure.
Enzymatic hydrolysis and refining: Add saccharification enzymes (such as glucoamylase) to remove unpolymerized small molecule glucose to improve the purity of resistant components.
Separation and purification: remove impurities and pigments through filtration, decolorization, desalting and other steps;
