Product Introduction
High Fructose Corn Syrup (HFCS) is a syrup sweetener made from corn starch as a raw material, enzymatically hydrolyzed into glucose, and then converted part of the glucose into fructose by isomerase. According to the fructose content, mainstream products can be divided into two categories:
HFCS-42: fructose content is about 42%, glucose content is about 53%, and the rest is a small amount of polysaccharides, which is a transparent and viscous liquid, and the sweetness is close to sucrose, which is the most widely used category in the beverage industry;
HFCS-55: Fructose content about 55%, glucose content about 42%, slightly sweeter than sucrose, lighter color, mainly used in beverages with higher requirements for sweetness and flavor level (such as carbonated drinks, fruit drinks).
Its core characteristics are strong solubility (solubility can reach more than 70% at 20°C, far exceeding sucrose), high stability (not easy to hydrolyze in acidic drinks, stable performance in the pH range of 3.0-5.0), good fluidity (viscosity lower than malt syrup, convenient for industrial pipeline transportation and measurement), and lower production cost than sucrose, making it one of the core sweeteners in the global beverage industry.

Application practice of fructose syrup in mainstream beverage categories
1. Carbonated drinks: core sweeteners to ensure a refreshing taste
Carbonated drinks (such as Coke, Sprite) are the largest application scenarios for HFCS, usually using HFCS-55 (high fructose content, suitable for "sweet but not greasy" needs), with an addition amount of about 10%-15%. Its advantages are:
After combining with carbonic acid, it can enhance the "bubble impact", and the sweetness is quickly released with the dissipation of the bubbles, avoiding the "sweet and greasy feeling";
It is stable in an acidic environment (cola pH around 2.5) and does not hydrolyze to produce glucose and fructose like sucrose, leading to flavor changes and ensuring a consistent taste across batches.
2. Fruit Drinks: Balance flavors and improve stability
In 100% pure fruit juices or fruit drinks, HFCS-42 (moderately sweet, not hiding the fruity aroma) is commonly used, and the amount is adjusted according to the sweetness of the juice (e.g. 5%-8% in apple juice, 3%-5% in grape juice):
Balance the natural acidity of the juice (e.g. hawthorn juice, lemon juice) while retaining the "sweet and sour" properties;
Prevents the precipitation of pectin and dietary fiber in fruit juices, improves beverage clarity, and extends shelf life (3-6 months longer than fruit juice drinks using sucrose).
3. Functional beverages: Adapt to nutritional fortifications to mask undesirable flavors
In sports drinks and vitamin drinks, the amount of HFCS-42 is usually 6%-10%, and the main effects include:
Provide fast energy (glucose can be quickly absorbed by the human body, fructose slowly supply energy, forming a "continuous energy supply" effect), and adapt to the energy replenishment needs after exercise;
