What is Allulose?

Allulose is a monosaccharide that occurs naturally in certain foods, including figs, raisins, wheat, maple syrup, and brown sugar, but in very small quantities. It is classified as a "rare sugar" because it makes up less than 0.005% of naturally occurring carbohydrates.

Structurally, allulose is an epimer of fructose, meaning it has the same molecular formula (C6H12O6) but a different three-dimensional structure. It appears as a white crystalline powder with sweetness approximately 70% of sucrose.

The unique aspect of allulose is that it provides a sweetness experience similar to sucrose but with much lower calories (approximately one-tenth of sucrose) and does not cause significant blood sugar elevation.
