Malto-oligosaccharides are functional oligosaccharides composed of 3-7 glucose units linked by alpha-1,4 glycosidic bonds, mainly produced by enzymatic hydrolysis of starch. They are available as a colourless transparent syrup or a white powder with a mild, clean sweetness of about 20% that of sucrose.
As a naturally starch-derived functional ingredient, MOS combines low sweetness, high moisture retention, heat stability, low viscosity and good solubility, and is widely used across bakery, sauces, frozen prepared foods and special dietary foods.
