When corn starch is used as raw material, starch needs to be refined first to remove protein, fat and other impurities in the raw material to avoid the impact of impurities on enzyme activity in the subsequent process. In the process of amylase hydrolysis of starch to produce dextrin, it is necessary to precisely control the amount of enzyme, reaction temperature and pH value, usually 

controlled at 85-90°C, and maintain the pH value at 6.0-6.5 to ensure that the starch hydrolysis is sufficient and not excessive. After the glycation enzyme hydrolyzes dextrin into glucose solution, the purity of the glucose solution reaches more than 95% through purification processes such as filtration, decolorization, and desalting, laying the foundation for subsequent isomerization reactions.

In the isomerization reaction stage, in addition to adding glucose isomerase, magnesium ions will also be added as the activator of the enzyme, and the reaction temperature is strictly controlled at 60-65°C and pH value at 7.0-7.5, and the reaction time is adjusted according to the target fructose content, which generally takes 12-24 hours. After the reaction, the enzyme proteins and impurities are removed by ion exchange resin, and then the syrup concentration is adjusted to 70%-75% through the concentration process, and finally the fructose syrup with different fructose content is formed. In addition to the common liquid fructose syrup, there is also powdered fructose syrup made from spray drying, which is easy to store and transport, and is easier to use in some special food processing scenarios, and its moisture content is usually controlled below 3%, and the shelf life can reach more than 18 months.
