What is Erythritol?

Erythritol is a four-carbon sugar alcohol with the molecular formula C₄H₁₀O₄. It is widely found in nature, including in mushrooms, lichens, melons, grapes, pears, and in trace amounts in animal eye lenses, plasma, fetal fluids, and urine. It also exists in small quantities in fermented foods such as wine, beer, soy sauce, and sake.
Produced through glucose fermentation, erythritol appears as a white crystalline powder with a clean, sweet taste. It is poorly absorbed, stable at high temperatures, has a wide pH range, and provides a slight cooling sensation on the tongue, making it suitable for various food applications.
