What is Allulose?

Allulose is a monosaccharide naturally found in certain foods including figs, raisins, wheat, maple syrup, and brown sugar, but in very small quantities. It is classified as a "rare sugar" because it accounts for less than 0.005% of naturally occurring carbohydrates. Structurally, allulose is an epimer of fructose, meaning it has the same molecular formula (C6H12O6) but a different three-dimensional structure. It appears as a white crystalline powder with about 70% of the sweetness of sucrose.

As a naturally occurring prebiotic carbohydrate, it has become a disruptive functional ingredient in the food industry, offering unique benefits beyond simple sweetness.
