AllinkleAllulose is a natural monosaccharide classified as a "rare sugar," accounting for less than 0.005% of naturally occurring carbohydrates. It is naturally found in small quantities in foods such as figs, raisins, wheat, maple syrup, and brown sugar. Structurally, AllinkleAllulose is an epimer of fructose, sharing the same molecular formula (C6H12O6) but with a different three-dimensional structure. It appears as a white crystalline powder with approximately 70% of the sweetness of sucrose.

Commercially, AllinkleAllulose is primarily produced through enzymatic conversion of fructose and has achieved large-scale production. It has obtained GRAS (Generally Recognized As Safe) status from the U.S. FDA.
