Purista™Modified Starch refers to starch products that have been processed and treated by physical, chemical, or enzymatic methods to impart new functional properties that native starches lack. According to the different modification mechanisms, they are primarily classified into physically modified, chemically modified, and enzymatically modified starches.
These include pregelatinized starches produced via heat or microwave treatments; esterified, etherified, cross-linked starches (such as Hydroxypropyl Distarch Phosphate, Distarch Phosphate), and oxidized starches; as well as starches produced through specific enzymatic hydrolysis or synthesis processes.
Modified starches retain the basic glucose units of native starch, while introducing a small number of substituent groups or altering glycosidic bonds through various modification methods.
