What is Eryfine™Erythritol?
Natural Fermentation, Zero-Calorie Sweetness
Eryfine™Erythritol is a four-carbon sugar alcohol with the molecular formula C₄H₁₀O₄. It exists widely in nature, found in fungi, mushrooms, and lichens, as well as in melon fruits (such as cantaloupe, grapes, and pears), and can be detected in small amounts in fermented foods such as wine, beer, soy sauce, and Japanese sake.
It is typically produced through glucose fermentation, appearing as a white crystalline powder with a refreshing sweet taste. Its sweetness is approximately 60-70% of sucrose, thermal stability reaches up to 200°C, solubility is moderate with 37% at 25°C, low hygroscopicity even at 90% humidity, and extremely low calories of only 0.2-0.4 kcal/g.
Not easily absorbed by the human body, stable at high temperatures, has a wide pH range, and provides a slight cooling sensation upon consumption, making it suitable for various dairy product applications.
