Application of Erythritol in Breakfast Cereals
What Is Eryfine™Erythritol?
Natural Sweetness, Enhanced Performance
Erythritol is a four-carbon sugar alcohol with the molecular formula C4H10O4. It occurs widely in nature - in fungi, mushrooms and lichens, and in melons, grapes, pears and other fruits; small amounts can also be detected in animal eye lenses, blood plasma, fetal fluids and urine, and trace amounts are present in fermented foods such as wine, beer, soy sauce and Japanese sake. Industrially, Eryfine™Erythritol is produced mainly through glucose fermentation and is supplied as a white crystalline powder with a clean, sweet taste.
Erythritol has a sweetness of about 60% to 70% that of sucrose with a mild cooling sensation on the palate. It is heat stable up to 200 degrees Celsius, has a moderate solubility of about 37% at 25 degrees Celsius, and shows very low hygroscopicity even at 90% humidity. Its caloric value is extremely low, at only 0.2 to 0.4 kcal/g.
Health Benefits
Extremely low calories and blood-glucose friendly
Erythritol is barely metabolized by the human body, with about 90% excreted unchanged in urine. At just 0.2 to 0.4 kcal/g and with no participation in glucose metabolism, it has almost no effect on blood glucose or insulin levels, making it an ideal sweetener for consumers managing sugar intake and for low-sugar, low-carb cereal formulations.
Oral health protection
Erythritol cannot be fermented into acid by cariogenic oral bacteria and therefore does not erode tooth enamel or cause caries. Regulations in many countries permit tooth-friendly claims such as "sugar free" and "non-cariogenic" on Eryfine™Erythritol-containing foods.
Better gastrointestinal tolerance than other sugar alcohols
Compared with xylitol, sorbitol, maltitol and other polyols, Eryfine™Erythritol is mainly absorbed in the small intestine and excreted directly, so only a small fraction reaches the colon to be fermented into gas. Within recommended intake levels, the risk of bloating and diarrhea is significantly lower, allowing higher dosage in breakfast cereals.
Natural occurrence with strong safety backing
Eryfine™Erythritol occurs naturally in fruits and fermented foods, and trace amounts exist in human blood plasma. The industrial product is made by glucose fermentation and has undergone systematic toxicological evaluation; major markets including China, the United States, Europe and Japan all approve it as a food ingredient for use as needed in production.
Application Advantages in Breakfast Cereals
Enables zero-sugar and keto recipes
Eryfine™Erythritol does not raise blood glucose and contributes almost no usable calories. Replacing sucrose with Eryfine™Erythritol allows a "no added sugar" declaration and, combined with high-fat ingredients such as nuts, seeds and coconut, creates keto and low-carb breakfast cereals with just 1 to 2 g of net carbs per serving.
Sucrose-like bulk and mouthfeel
As one of the few crystalline bulk sweeteners, Eryfine™Erythritol gives products the granule volume and sweetness backbone of sugar. Its cool, fast-dissolving sweetness works well whether the cereal is eaten dry or mixed into milk, without the bitter aftertaste common with high-intensity sweeteners.
High tolerance for large dosage
Eryfine™Erythritol stands out among sugar alcohols for digestive tolerance, allowing it to serve as the primary sweetener in nut granolas and porridge powders at substantial addition levels; consumers can eat a full serving with a much lower risk of bloating or laxative effects.
Low hygroscopicity protects crispness and shelf life
Eryfine™Erythritol absorbs very little moisture even under high humidity, reducing the risk of cereal clusters and coatings turning soft or sticky from moisture uptake and keeping crunchy cereals dry and crisp throughout shelf life.
Synergy with high-intensity sweeteners
Blended with monk fruit extract or stevia, Eryfine™Erythritol masks the bitter aftertaste of high-intensity sweeteners and extends the sweetness duration, bringing reduced-sugar formulations closer to the taste of sucrose while keeping the ingredient statement clean and highly recognizable to consumers.
